Roasted Vegetables on Couscous with a Zaatar Dressing

This is an easy dish as I just bought some prepared mixed vegetables from the supermarket and put them in the oven. Couscous is easy to make too. I love couscous and Zaatar together it tastes so exotic and the flavours are so layered. This is just a yummy dish packed full of flavours.

Ingredients (serves 2)

  • 1 pack of roasted vegetables, cooked to packet instructions (I used Mediterranean marinated)
  • 50g couscous
  • 150ml of hot water
  • 1/2 preserved lemon
  • 1 tbsp drained capers
For the dressing
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp maple syrup
  • 1 1/2 tbsp zaatar
  • Pinch red pepper flakes
  • Pinch garlic powder

Directions

  1. While the vegetables are cooking, make the couscous add the couscous to a bowl. Pour over the hot water, cover and set aside.
  2. Make the dressing by adding all of the ingredients into a jar or bowl. Shake or whisk to combine.
  3. To serve – fluff up the couscous with a fork. Share between serving dishes. Top with the roasted vegetables. Pour over the dressing. Finish by sprinkling over the capers and preserved lemons. Enjoy 😊
