So I found out today that the first piccalilli recipe dates back to 1694 by Lady Anne Blencowe’s in England. Just shows how good it is as it a firm favourite still. If you grown your own veg its an awesome way to preserve them as it is so versatile. As I was trying to recreate a ploughman’s I had to also add cheddar cheese, ham and gherkins.
Ingredients (serves 2)
- Small bag of rocket leaves
- 1 cup peeled broad beans
- 8 gherkins, sliced on a diagonal
- 6 slices strong cheddar chees, halved
- 2 slices ham, roughly torn
- Dollop of Piccalilli (recipe here)
Directions
- Assemble the salad by adding all of the ingredients between 2 bowls. Finish off with a big dollop of piccalilli. Enjoy 😊
