Smoked Salmon and Avocado on Crumpets with a Dill and Mustard Dressing

OMG! Why have I never thought of doing savory crumpets before! This was an amazing brunch. I didn’t have any eggs but adding a poached egg would make it perfect! These are one of my favourite combinations smoked salmon, avocado and dill with a tang of mustard. Just yummy! I am gong to have a play with different savory toppings.

Ingredients

For the Dressing

  • 2 tbsp fresh dill fronds, chopped
  • 2 tbsp good quality olive oil
  • 2 tbsp Dijon mustard
  • 1 tbsp runny honey
  • Juice half lemon
  • Pinch of salt

For the Crumpets

  • 4 crumpets
  • 4 slices of smoked salmon
  • 2 avocado, de stoned, flesh removed and sliced
  • Juice half lemon
  • Watercress or rocket to serve

Directions

  1. Make the dressing by adding all of the ingredients to a bowl or jar. Whisk or shake to combine.
  2. Toast the crumpets on both sides and share between 2 plates.
  3. Add a tbsp of the dressing to the crumpets so the oil goes into the crumpet bubbles/holes.
  4. Tear over the smoked salmon, add the sliced avocado, squeeze over the other half of lemon juice.
  5. Finish off with the rest of dressing and serve aside some watercress or rocket.
