Very Simple Pea and Mint Dip

What else screams british summer apart from Pimms? Peas and mint! I made some black pudding Bon Bon’s (recipe to follow) and needed a really light dip to go with them. I didn’t have much in the kitchen but I did have peas in the freezer and mint in the garden. This was so easy I didn’t even defrost the peas I just put them in a colander and ran the hot tap over them. This literally takes a couple of minutes you just chuck everything in the food processor and blitz. The colour is beautiful. If you have people coming over and you are going to have chips and dips to start try this it lightens up any table and is something a bit different. I love how sweet peas are and of course that lovely fresh mint. This is defo a recipe to keep in your back pocket.

Ingredients

  • 400g peas, I used frozen
  • 1 tbsp fresh mint, leaves only
  • 1 tbsp lemon juice, I used jarred
  • 1 tbsp oil, I used rapeseed
  • 2 tbsp water
  • 1/4 tsp sea salt
  • 1/2 tsp fresh black pepper

Directions

  1. Put everything a food processor apart from seasoning and blitz, I left a bit of texture in mine but just do yours to the texture you like. If it isn’t wet enough just add a splash of water. Mix in the seasoning and taste, adjust if needed. serve and Enjoy 😊
