I love spring and summer as the salads for lunch are back! Gone are the hearty soups, it’s light fresh and healthy from now onwards, with some indulgences of course! At the weekend with had a really nice cream tea and as I am from Devon (closer to Cornwall side) I am extremely fussy about clotted cream, luckily Morrison’s sell a jersey version which was almost there! After this indulgence we need to go into the week on a healthy note, if you haven’t tried pickling fennel and you like the flavour please try it as it took this salad from a good one to a stunning one!
- 3 slices of smoked salmon
- handful of watercress
- tbsp capers
- spoonful of pickled fennel (recipe here)
- drizzle of lemon olive oil
- Combine all the ingredients in a bowl and drizzle with the olive oil
