I love all the produce you get in the summer. I think if you eat something when it is actually in season tastes so much better. I really love courgettes as they are so versatile and take on flavours really well. This zaatar works perfectly and I always use red pepper flakes rather than chilli flakes as they are so much sweeter.
Ingredients (serves 2)
- 1 tbsp olive oil
- 1 tbsp zaatar
- 1 tsp red pepper flakes
- ½ tsp garlic granules
- ½ tsp sea salt
- 1 courgette, sliced
- Small bag of salad leaves
- 6 sundried tomatoes, roughly chopped
- 2 slices of ham
Directions
- In a bowl mix the olive oil, zaatar, pepper flakes and salt. Give it a whisk to combine.
- Heat air fryer to 200 degrees. Add the courgettes to the zaatar mix and toss to coat them.
- Add to air fryer cook for 20 minutes, shaking halfway through.
- Share the salad leaves between to bowls. Add the courgettes and sundried tomatoes. Finish off by tearing over the ham. Enjoy 😊
