Yep it’s another wild garlic pesto recipe from me. This time it’s a nice simple healthy salad. The butter beans and tuna work so well with the pesto. It’s also purple sprouting broccoli season and it’s so yummy raw and adds a lovely crunch. I think different textures in the salad makes it much more interesting and pleasurable to eat.




Ingredients
- 1 tin of tuna drained
- 1 tin of butter beans, drained and washed
- 1 head purple sprouting broccoli, stem discarded
- 6 vine tomatoes, halved
- large handful of salad leaves
- 2 tbsp of wild garlic pesto (recipe here)
- Salt and pepper, to taste
Directions
- Add all of the ingredients to a bowl and toss to mix well. Yep it’s that simple. Enjoy 😊
