Wild Garlic Pesto Tuna and Butter Bean Salad with Purple Sprouting Broccoli

Yep it’s another wild garlic pesto recipe from me. This time it’s a nice simple healthy salad. The butter beans and tuna work so well with the pesto. It’s also purple sprouting broccoli season and it’s so yummy raw and adds a lovely crunch. I think different textures in the salad makes it much more interesting and pleasurable to eat.

Ingredients

  • 1 tin of tuna drained
  • 1 tin of butter beans, drained and washed
  • 1 head purple sprouting broccoli, stem discarded
  • 6 vine tomatoes, halved
  • large handful of salad leaves
  • 2 tbsp of wild garlic pesto (recipe here)
  • Salt and pepper, to taste

Directions

  1. Add all of the ingredients to a bowl and toss to mix well. Yep it’s that simple. Enjoy 😊
