Hot Smoked Salmon on a bed of Lentils with a Grapefruit, Coriander and Mustard Dressing

I don’t know why I never made a dressing with grapefruit before. I bought them for a fruit salad and had half left. I love lentils and hot smoked salmon together anyway but this dressing gave it a massive lift and made it really special.

Ingredients

For the dressing

  • Juice of 1/2 grapefruit
  • 1 tbsp chopped coriander
  • 1 tbsp olive oil
  • 1 tbsp whole grain mustard
  • 1 tsp Dijon mustard
  • Pinch of salt
  • Small dash of water

For the salad

  • 250g of cooked puy lentils
  • 2 pieces hot smoked salmon
  • Small bad of salad leaves

Directions

  1. Make the salad dressing by adding all the ingredients into a jar with a lid or bowl, shake or whisk until combined. Set aside.
  2. I made my lentils but ready to cook are fine. If your cooking your own. Give the lentils a good rinse, add to a saucepan, Crumble in half a stock cube and fill the pan with 2 thirds of water over the lentils. Bring to the boil and simmer for 20 minutes or until lentils have soaked up all the liquid.
  3. Tip the lentils into a bowl and pour over all of the dressing, give it a good stir to coat.
  4. Assemble the salad by sharing the leaves between 2 serving bowls. Spoon over the lentils then add the hot smoked salmon. Enjoy 😊
