So we had some leftover baked sweet potatoes from one of our dinners and I didn’t want to see them go to waste so I had a look online and saw a recipe for a sweet potato dip. It was a really good idea, I spiced it up a bit and enjoyed it very much. It is smooth and silky with a lovely warmth to finish. It was so easy and quick to make as everything is chucked in the food processor and whizzed. I definitely won’t be chucking away left over sweet potatoes again.
Ingredients (serves 2)
- 1 left over baked sweet potato (or bake in 200 degrees oven for 1 hour)
- 1/2 tsp smoked paprika
- 1/2 tsp sea salt
- 1/2 tsp chilli powder
- 1/2 tsp turmeric
- 1 tsp cumin powder
- 1 minced garlic clove
- 3 tbsp tahini paste
- 2 tbsp olive oil
- juice of 1 lemon
- chilli oil (recipe here)
Directions
- To make the dip add all the ingredients into a food processor and blitz until smooth. Place the mixture into a serving bowl and make a groove using you finger on the top of the dip. Fill with some chilli oil. Enjoy.
