Fresh and Zingy Prawn Noodle Salad with a Soy Sauce and Lime Dressing Recipe

So as we have been eating a lot of christmas flavours recently I fancied something fresh and healthy but not too spicy. This worked a treat it is zingy and refreshing. It is so easy to keep a bag of soya beans in the freezer and grab a handful as and when you want to add them to a salad, we also buy a big bag of prawns and thaw only the amount we need.

Ingredients (serves 2)

  • 12 prawns
  • 1 tbsp chilli oil, recipe here, or 1 fresh chilli finely chopped
  • 1 carrot, peeled and grated
  • good handful of frozen soya beans, thawed
  • 1 nest of noodles, cooked to instructions
  • small bunch of mint, leaves only finely chopped
  • small bunch of coriander, leaves only finely chopped
  • peanuts to garnish, optional

For the dressing

  • 2 tbsp lime juice
  • 2 tbsp pure sesame oil
  • 1 tbsp chilli oil, recipe here, or 1 fresh chilli finely chopped
  • 3 tbsp light soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp runny honey
  • 1 tbsp kecep manis, optional

Directions

  1. Marinade the prawns in a tbsp of chilli oil or some olive oil and fresh chilli. Put in the fridge while you prepare all the other ingredients.
  2. Cook the prawns on a medium heat for 4 mins on each side, set aside
  3. Add all of the other salad ingredients into a bowl.
  4. To make the dressing add all of the ingredients into an empty jar or bowl, shake or whisk well to combine. Add 3/4 to the salad and mix with a fork to coat and mix up the salad.
