Sometimes its nice to keep some salads simple. This is great salad for that. It makes such a good lunchbox salad too. I cooked my halloumi in the air fryer. Which made this even simpler. I used my own pesto which I freeze in ice cube trays but any jarred pesto would work too. Just classic Mediterranean tasty flavours.








Ingredients (serves 2)
- 225g halloumi, cubed
- 70g pasta, cooked to packet instructions
- 2 tbsp pesto (fresh or jarred), I used my wild garlic pesto
- 8 sun blush or sun dried tomatoes
- Small bag of salad leaves
Directions
- Set the air fryer to 200 degrees. Add the halloumi and cook for 10 minutes, shaking halfway.
- In a bowl add the cooked pasta and pesto, give it a good mix so the pasta gets fully coated.
- Assemble the salad by adding the salad leaves to a serving dish, spoon over the pasta, tuck in the tomatoes and finish off with the cubed halloumi. Enjoy 😊
Tip – I make a batch of pesto and I freeze it in an ice cube tray, so you can just add it into any dish.
