I love dried herbs they add flavour to anything. My favourites are oregano, thyme and rosemary. When I was in Greece they served a salad dressing like this over their feta Greek salad. I used halloumi in mine but I tried to recreate the dressing and it was yummy.




Ingredients (serves 2)
For the Salad
- 250g block of halloumi, sliced
- Small bunch watercress
- 6 sun dried tomatoes, roughly chopped
- 6 olives, halved
For the Dressing
- 2 tbsp olive oil
- Juice of half a lemon
- 1/2 garlic clove, minced
- 1/2 tbsp dried oregano
- 1/2 tbsp dried thyme
- 1/4 tsp maple syrup
- Pinch of salt and pepper
Directions
- Heat a spray of oil in a frying pan. Cook the halloumi for 2 minutes on each side.
- Make the dressing by adding all the ingredients to a jar or bowl shake or whisk to combine.
- Assemble the salad by adding the watercress between 2 bowls. Top with the sun dried tomatoes, olives and halloumi. Pour over the dressing. π
