I was an extremely lucky girl to get a jar of truffle slices for one of my xmas presents. As you can probably guess I am using them sparingly. My husband was in London for work and popped into borough market and there was some wild mushrooms. He knows me so well and brought home some black trumpets and chanterelle mushrooms. This was so yummy and felt really indulgent.





Ingredients (serves 2)
- 1 Pizza Base Dough, Rolled out thinly
- 2 handfuls of mixed wild mushrooms, cleaned with a brush
- 1 ball of mozzarella, drained
- 170g gruyere cheese, grated
- 6 truffle slices
- 4 slices bacon, prosciutto or ham
- Parmesan shavings, optional
- Good crack black pepper
- Knob of butter for frying
- Oil spray to stop sticking
Directions
- Preheat oven to 200 degrees fan.
- In a frying pan add a knob of butter. Add the mushrooms and cook for a few minutes. Set aside.
- On a pizza stone or baking tray spray some oil and roll out the pizza dough as thin as you can.
- Pop it in the oven for 5 minutes.
- Remove, add the toppings the grated cheese first, ham or bacon. Tear over the mozzarella and finish with cooked mushrooms.
- Pop back in the oven and bake for around 12 minutes or until cheese has melted. Serve and enjoy ☺️
