I don’t think there is anything better than this classic retro dish. It reminds me of my Sunday lunch at my nans. I oddly also had a really good one when I was india. I also think it has to be a crunchy lettuce can of like a Caesar salad.
Ingredients (serves 2)
- 150g cooked Atlantic prawns, thawed if frozen
- 3 tbsp light mayonnaise
- 1 tbsp tomato ketchup
- 3 dashes of tobasco sauce
- Juice ½ lemon
- Little gem or romaine lettuce, chopped
- 1 avocado, de stoned skin removed and sliced
- Sprinkle of chopped chives
- Sprinkle cayenne pepper
Directions
- In a bowl big enough to toss the prawns in, add the mayo, ketchup, tobasco and lemon juice. Give it a mix to combine. Add the prawns and give it a stir so the prawns are coated.
- Add the chopped lettuce between 2 bowls, add the avocado and spoon over the prawns tap on some cayenne pepper. Serve with a lemon wedge and sprinkle of chives. Enjoy 😊
