Crustless Courgette, Cheese and Herb Quiche

I love making crustless quiches (its also a secret way to get eggs in my hubby!). You don’t need pastry and can literally chuck in anything you have knocking about. I used manouri cheese as that’s what I had but any cheese with work, feta, cheddar or even grated halloumi. I think it does need some herbs in it to add some extra flavour. Mine kept in the fridgefor 3 days and a sealed box.

Ingredients (serves 2)

  • 4 eggs
  • 1 tsp dried oregano
  • ½ tsp dried chives
  • Pinch red pepper flakes
  • Good pinch of sea salt and fresh black pepper
  • 125ml milk
  • 120g plain flour
  • 1 tsp baking powder
  • 1 courgette, grated
  • 100g of cheese, I used manouri but feta, cheddar or halloumi would work
  • Slice of ham torn, omit if you want to keep it veggie
  • 1 tbsp chopped fresh mint
  • 2 tbsp parmesan cheese, grated

Directions

  1. Pre heat oven to 180 degrees fan.
  2. In a mixing bowl crack in the eggs and also add the oregano, chives, pepper flakes, salt and pepper. Give it a good whisk until the eggs are fluffy.
  3. Add in the rest of the ingredients and give it a mix so everything is combined and you have a batter.
  4. Tip into a quiche or cake tin (greased or lined with baking paper if your not using non stick). Bake in the oven for 40 minutes I used the cake test and made sure my skewer came out of the center clean.
  5. Leave in the tin to rest for 10 miniutes. Serve warm or cold. Enjoy 😊
