As snowdrops are flowering and daffodils are starting to shoot. I decided to make myself a nice zingy and light salad. I always associate courgettes with summer so thought I would use them to give myself hope that winter will be over soon. This definitely reminded me of summer and holidays. It was yummy and did take me to a much warmer place.






Ingredients (serves 2)
- 100g smoked salmon
- Small bag salad leaves
- 1 medium courgette, cut lengthways then sliced into 1cm pieces
- 4 caper berries, left whole
- Pinch of salt, pepper and dried oregano
- ½ tbsp olive oil
- Zest and juice of ½ lemon
- 1 tbsp olive oil
Directions
- Preheat oven to 200 degrees fan. Add the courgettes, capers and the ½ tbsp of oil (don’t use more otherwise they go soggy) to an oven proof dish. Season with the salt, pepper and oregano. Give it a mix so the everything is coated. Bake in the oven for 30 mins.
- To assemble the salad, add the leaves to a bowl. Slice the capers discarding the stalks. Spoon them over the salad along with the the courgettes and finish off with torn pieces of salmon. Enjoy 😊
