So we had a couple of sausages leftover from dinner one night and a stub of sourdough so I thought I would make a salad. It worked really well and had a really comforting flavour. The crunch from the croutons really finish off. It kind of tastes like a deconstructed breakfast. I really loved the brown sauce dressing.
Ingredients (serves 2)
For the salad
- 2 cooked sausages
- 8 sun dried tomatoes, roughly chopped
- Small bag of salad leaves
For the croutons
- Chunk of stale sourdough bread
- 2 tbsp olive oil
- 3 tbsp grated Parmesan cheese
- Pinch of salt and pepper
For the dressing
- 2 tbsp brown sauce
- 1 tbsp of balsamic vinegar
- 1 garlic clove, peeled and minced
- 2 tbsp olive oil
Directions
- Pre heat oven to 200 degrees (fan). Tear the bread into chunks and place in a bowl. Pour over the olive oil, Parmesan and seasoning. Mix with your hands to coat all the chunks. Place in a baking tray and bake for 20-30 minutes until crispy and golden.
- Make the dressing by adding all of the ingredients in a jar or bowl, shake or whisk to combine.
- Assemble the salad by sharing the salad between 2 serving bowls. Add the chopped sun dried tomatoes and slice the cold sausages add to each of the bowls. Drizzle over the dressing and finish off with the croutons. Enjoy.
