Leftover Sausage and Sun Dried Tomato Salad with Parmesan Croutons and a Brown Sauce Dressing

So we had a couple of sausages leftover from dinner one night and a stub of sourdough so I thought I would make a salad. It worked really well and had a really comforting flavour. The crunch from the croutons really finish off. It kind of tastes like a deconstructed breakfast. I really loved the brown sauce dressing.

Ingredients (serves 2)

For the salad

  • 2 cooked sausages
  • 8 sun dried tomatoes, roughly chopped
  • Small bag of salad leaves

For the croutons

  • Chunk of stale sourdough bread
  • 2 tbsp olive oil
  • 3 tbsp grated Parmesan cheese
  • Pinch of salt and pepper

For the dressing

  • 2 tbsp brown sauce
  • 1 tbsp of balsamic vinegar
  • 1 garlic clove, peeled and minced
  • 2 tbsp olive oil

Directions

  1. Pre heat oven to 200 degrees (fan). Tear the bread into chunks and place in a bowl. Pour over the olive oil, Parmesan and seasoning. Mix with your hands to coat all the chunks. Place in a baking tray and bake for 20-30 minutes until crispy and golden.
  2. Make the dressing by adding all of the ingredients in a jar or bowl, shake or whisk to combine.
  3. Assemble the salad by sharing the salad between 2 serving bowls. Add the chopped sun dried tomatoes and slice the cold sausages add to each of the bowls. Drizzle over the dressing and finish off with the croutons. Enjoy.
