Chicken Laab Lettuce Wraps

This dish takes me back to Thailand every time I make it. I know exactly where I was, it was in paradise park farm. They had quite birds that you could feed and few other animals.The pool which we ended up using a few times is amazing it’s an infinity pool up in the hills over looking the valley and sea. Just divine.

Ingredients

  • 250g chicken mince
  • 1 tbsp garlic and ginger paste
  • 1 shallot, peeled and finely sliced
  • 1 tsp lemongrass paste, optional
  • 2 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 1/2 tsp palm or brown sugar
  • Juice 2 limes
  • 1/4 tsp white pepper
  • Pinch of five spice
  • 1 tbsp chopped fresh coriander
  • Baby gem lettuce, leaves removed
  • Oil for frying

Directions

  1. Get the sauce ingredients ready by adding the fish sauce, sugar, lime juice, pepper and five spice. Give in a mix and set aside.
  2. Heat about a tbsp of cooking oil to a wok or pan until smoking hot. Add the chicken and stir fry for 2 minutes. Add the shallots, ginger and garlic paste and lemon grass (if using). Stir fry for a minute. Pour in the sauce and stir fry again for 2 minutes.
  3. Serve with the lettuce leaves. To eat spoon a couple of spoonfuls of laab on the lettuce leaf roll and enjoy. πŸ˜‹
