This dish takes me back to Thailand every time I make it. I know exactly where I was, it was in paradise park farm. They had quite birds that you could feed and few other animals.The pool which we ended up using a few times is amazing itβs an infinity pool up in the hills over looking the valley and sea. Just divine.





Ingredients
- 250g chicken mince
- 1 tbsp garlic and ginger paste
- 1 shallot, peeled and finely sliced
- 1 tsp lemongrass paste, optional
- 2 tbsp fish sauce
- 1 tbsp light soy sauce
- 1/2 tsp palm or brown sugar
- Juice 2 limes
- 1/4 tsp white pepper
- Pinch of five spice
- 1 tbsp chopped fresh coriander
- Baby gem lettuce, leaves removed
- Oil for frying
Directions
- Get the sauce ingredients ready by adding the fish sauce, sugar, lime juice, pepper and five spice. Give in a mix and set aside.
- Heat about a tbsp of cooking oil to a wok or pan until smoking hot. Add the chicken and stir fry for 2 minutes. Add the shallots, ginger and garlic paste and lemon grass (if using). Stir fry for a minute. Pour in the sauce and stir fry again for 2 minutes.
- Serve with the lettuce leaves. To eat spoon a couple of spoonfuls of laab on the lettuce leaf roll and enjoy. π
