Last weekend we picked a load of blackberries on our walk back from the beach. My flavoured oils have been so good (recipe’s here) that I thought I would have a go at my own vinegar’s as I like them in salad’s. After doing some research I now realise this can be used in sweet or savoury dishes and after trying it I can see why, it is very yummy.
Ingredients (makes 750ml)
- 500g blackberries
- 500ml white wine vinegar
- 1lb sugar (we use unrefined golden granulated)
Method
- Weigh your blackberries and match with vinegar gram to ml, place in a large bowl and weigh the blackberries down with a plate, cover with cling film and leave for 5-7 days.
- Once ready drain the liquid through muslin cloth and into a jug. Match your sugar to your liquid, 1 pint of liquid equals 1lb of sugar.
- Transfer the sugar and liquid to a saucepan, bring to the boil and simmer for 5 minutes. Pour into sterilised bottles.
