Feta and Sugar Snap Pea Salad with a Parsley and Mint Yoghurt Dressing

Sometimes I really fancy something healthy just like when I have a craving for junk food. I had a pack of sugar snap peas that I forgot to add to a stir fry so I thought id put them in a salad. They were delicious crunchy, sweet and fresh. I also had ½ red pepper left so I just chucked it in the air fryer it turned out really good. Everything worked so well together in flavour and texture.

Ingredients (serves 2)

For the Salad
  • 200g pack of feta cheese
  • 160g sugar snap peas
  • Small bag of salad leaves
  • 4 tbsp sprouting beans
  • 12 pickled radishes, recipe here
  • ½ red pepper, seeds and pith removed, sliced very thinly
  • 1tsp olive oil
For the Yoghurt Dressing
  • 6 tbsp plain yoghurt, I used plant based
  • 2 tbsp finely chopped parsley
  • 3 tbsp finely chopped mint, leaves only
  • Zest and juice of a lemon
  • Pinch of salt

Directions

  1. Mix the sliced red pepper with the tsp of olive oil sprinkle over a pinch of salt. Cook in the air fryer at 200 degrees for 8 minutes shaking halfway through. Set aside.
  2. Make the yoghurt dressing by adding all of the ingredients into a bowl, give it a stir to combine.
  3. Assemble the salad by adding the salad leaves between 2 bowls. Add the sugar snap peas and sprouting beans. Spoon over the dressing. Crumble the feta on top and finish with the cooked peppers and radish.
