I love stuffing vegetables, whether its peppers, courgettes and such like. When I was shopping there were these beautiful juicy tomatoes and I had some feta knocking around in the fridge so bought them. They were delicious. You get the sweetness from the tomato,
saltiness from the feta and bite from the spring onion.









Ingredients (serves 2)
- 2 large ripe tomatoes
- 70g feta cheese
- 1 spring onion, finely sliced
- 1 tbsp chopped basil
- 3 tbsp breadcrumbs
- Pinch dried oregano, optional
- Pinch red pepper or chilli flakes, optional
Directions
- Pre heat oven to 200 degrees fan.
- In a bowl crumb the feta and add the spring onion, basil, breadcrumbs, oregano and chilli flakes.
- Carefully slice the tops of the tomatoes off to form lids. Using a teaspoon scoop out the insides of the tomatoes. Remove the white stems but chop the rest of the flesh.
- Add the chopped tomato to the bowl with the other ingredients. Gently toss with a fork so everything is combined but still has some texture. Taste and season if needed, my feta was salty so I didn’t need any.
- Fill the tomatoes with the mixture and place the lids back on. Pop in the oven and bake for 25 mins. Serve with salad or your chosen side. Enjoy J
