Salami and Black Eyed Bean Salad

This is such a good store cupboard and freezer salad. We had a charcuterie platter and there was some salami leftover. I thought I would chuck it into a salad. I always like to keep tinned pulses and jarred herbs in the cupboard as they are so handy. In the freezer I also always have a bag on peas and sweetcorn. This is quick, filling and really tasty

Ingredients

  • Tin black eyed beans, drained and rinsed
  • Handful each of frozen sweetcorn and peas, thawed
  • 10 cornichons, roughly chopped
  • 1 tsp dried mixed herbs, I used Italian
  • Pinch red pepper flakes
  • 1 tbsp good quality olive oil
  • 1 tbsp sherry or red wine vinegar
  • Salt and pepper to taste

Directions

  1. In a bowl add all of the ingredients. Give it a good toss to combine. Serve and enjoy
