Zaatar Baked Eggs in a Tomato Sauce

I love eggs but my husband doesn’t eat them like this. He will only eat them if they are an ingredient in a cake or something. My friend is Israeli and she goes home n the summer. Kindly she brings me back zaatar and oregano. It tastes so good I add it to so much stuff. My friend adds hers to a toasted cheese sandwich, I stole that idea! This was a great dish for one person as thankfully the supermarkets sell small tins of tinned tomatoes. It is also really quick to make. This was tasty and really satisfying. Once the eggs run into the sauce it is mouth watering.

Ingredients (serves 1)

  • 2 eggs
  • ½ shallot, peeled and finely chopped
  • ½ sweet pointed pepper, seeds removed and finely chopped
  • 1 garlic clove, peeled and finely chopped
  • 1 tbsp zaatar and a pinch for the end
  • 1 heaped tsp sweet smoked paprika
  • 227g tinned chopped tomatoes
  • Pinch of red pepper flakes
  • 1 tbsp chopped parsley
  • Sea salt and fresh pepper to taste
  • Oil for frying

Directions

  1. In a lidded small frying pan that will hold two eggs, heat a drizzle of oil. 
  2. Add the shallots, pepper and garlic. Cook for 4 minutes. Add in the spices and give it a good stir to coat everything. Cook for a further minute.
  3. Add in the tinned tomatoes and simmer for 5 minutes. Add the red pepper flakes, taste and season to your taste.
  4. Crack the eggs into a ramekin. Make a well in the pan and tip the egg in carefully. Repeat with the other egg. Cover with the lid and lightly simmer for 6-7 minutes.
  5. Finish off with a sprinkling over zaatar over the eggs and some parsley. Enjoy 😊
