Easy Pate Stuffed Mushrooms

Omg I don’t know why I haven’t tried this before it is delicious and so easy to make. I had some mushrooms and some pate going out of date in the fridge. I decided to put the two together. I always have breadcrumbs in the freezer that I make from the ends and stale bits I have over from a loaf. These mushrooms were delicious, juicy and tasty. I often buy pre made stuffed mushrooms, never again! It was also so easy to make as you don’t have to scoop out ant of the mushroom gills, you just need to remove the stalks.

Ingredients

  • 4 portobello mushrooms, stalks removed
  • 150g pate
  • 6 tbsp breadcrumbs
  • 2 tbsp parmesan, finely grated
  • Sprig thyme, leaves only
  • Cooking spray oil
  • Sea salt and fresh black pepper for seasoning

Directions

  1. Pre heat oven to 190 degrees fan.
  2. In a bowl add the breadcrumbs, parmesan and thyme. Give it a mix to combine and set aside.
  3. Season the inside of the mushrooms well with salt and pepper. Spread the pate over the inside of the mushroom. Sprinkle over the bread crumbs.
  4. Pop the stuffed mushrooms onto a baking tray. Give them a spray with some cooking oil. (If you haven’t got cooking spray just rub some il on the sides of the mushroom). Pop in the oven and bake for 20 minutes. Serve and enjoy 😊
