Bacon and Sun Blushed Tomatoes on a Rocket, Parsley and Chive Salad

I am really enjoying chives in everything at the moment but particulary in salads. My other addidction this summer are sun blushed tomatoes, they are so delicious and juicy. A certain 4 lettered blue and yellow german supermarket sell the best ones in my opinion in their deli area. Air fryer bacon is also the best ever so yummy and crispy.

Ingredients (serves 2)

  • 6 rashers smoked streaky bacon
  • Small bag rocket leaves
  • 2 tbsp chopped chives
  • 2 tbsp chopped parsley leaves
  • 16 sun blush tomatoes
  • 1 tbsp olive oil
  • 1 tsp mustard, I used honey mustard
  • 2 eggs

Directions

  1. Place the bacon in the air fryer in a single layer. Cook for around 8 mins on 190 degrees. Drain on kitchen paper.
  2. Add the eggs to a pan of boiling water. For a slightly runny center simmer for 7 minutes. Drain and run under cold water. Once cool enough, peel and slice in half. Set aside.
  3. In a bowl add the rocket, chives and parsley. Mix the olive oil with the mustard and drizzle over.
  4. Add the tomatoes and break up the crispy bacon into chuncks sprinkle over the salad and finish off with the egg halves. Enjoy 😊
