Halloumi and Orzo Salad with Herby Air Fryer Courgettes

This is a really nice fresh summery salad. I love frying the courgettes in the air fryer as it is so easy. I hadn’t tried orzo in a salad before and it worked really well. As it is smaller pasta it was really easy to stir through the herbs. This had a really meddetarian vibe with the mint, lemon and basil flavours.

Ingredients (serves 2)

For the Courgettes
  • 1 courgette, top and tailed and cut into rounds
  • ¼ tsp garlic granules or powder
  • ½ tsp mixed dried herbs
  • Pinch red pepper flakes
  • Pinch of sea salt
  • Pinch of fresh black pepper
  • 2 sprays of light oil
For the Salad
  • 1 pack halloumi, drained and sliced into 8 slices
  • Orzo cooked to packet instructions
  • 1 tbsp fresh mint, leaves only finely chopped
  • 1 fresh basil leaves, finely chopped
  • Juice half lemon
  • Small bag of salad leaves

Directions

  1. In a bowl add all the ingredients into a bowl. Give it a good mix with your hands so the courgettes are coated. Put in the air fryer at 200 degrees and cook for 20 minutes (can do this in oven too). Set aside.
  2. After you have cooked and drained the orzo while it is still slightly warm, stir in the mint, basl and a pinch of salt. Squeeze in the lemon juice and give it a stir.
  3. Heat a dry frying pan until hot. Add the halloumi slices, turn the heat down to medium and cook for about 3 minutes on each side. They wont start to brown until all the liquid that comes out has evaporated. When you flip them they might brown quicker than 3 minutes so just keep an eye on them. Remove and set aside.
  4. Assemble the salad by sharing the salad leaves between 2 serving bowls. Spoon over the orzo. Add the courgetti slices and finish off with the halloumi. Enjoy 😊
