So I have gone through a retro salad phase and this was a Caesar salad kind of day. I decided to keep it light and not add the croutons. It was really yummy. I’m lucky I live near a smokery and they smoke their own chicken breasts. This added a really nice depth of flavour. Also who doesn’t like ultra crispy bacon!



Ingredients (serves 2)
For the Salad
- 1 smoked or cooked large chicken breast, sliced
- 1 little gem lettuce, halved and sliced
- 8 cherry tomatoes, halved
- 4 streaky bacon slices, I used smoked
For the Dressing
- 1 tbsp light mayo
- • 1 tsp Dijon mustard
- • 2 anchovies, finely chopped
- • 1 garlic clove, peeled and roughly chopped
- • 1 tbsp olive oil
- • Juice of half a lemon
- • 1 tbsp finely grated parmesan cheese
- • Pinch of sea salt
Directions
- Heat the air fryer to 2oo degrees. Add the bacon slices and cook for 7 minutes or until nice and crispy shaking half way. A good tip is not to let the slices touch each other.
- While the bacon is cooking. In a food processor add all of the dressing ingredients except for the parmesan and blitz until smooth. If the dressing is slightly too thick just add a splash of water. Stir in the parmesan and set aside
- In a bowl add the chopped lettuce and tomatoes. Pour over the dressing and give it a good toss so everything is coated.
- Share the dressed salad between two bowls. Add the sliced chicken and finish by roughly crumbling over the bacon. Enjoy 😊
