Ham and Edamame Bean Salad with a Mustard Dressing

Ingredients (serves 1)

For the dressing
  • 2 tbsp olive oil
  • 1 heaped tsp wholegrain mustard
  • 1 tsp Dijon mustard
  • Juice of 1/2 lemon
  • 1 tsp runny honey
For the Salad
  • Bag of salad leaves
  • 5 cherry tomatoes, halved
  • 4 gherkins halved
  • 1/2 cup edamame beans, thawed if frozen
  • 2 slices ham, torn into pieces

Directions

  1. Make the dressing by adding all the ingredients into a jar or bowl, give it shake or whisk to combine.
  2. Assemble by adding all the salad ingredients into a serving bowl. Drizzle over the dressing. Enjoy 😊
