Healthy Veal Schnitzels with Sautéed Garam Masala Sweet Potatoes Recipe

This recipe is simple but very tasty. The meat was so tender and juicy. The sweet potato was so comforting with nice little crispy bits. I love adding the garam masala sprinkled over the top it just gives it that extra tastiness. If you are after a quick tasty healthy dinner then this is perfect.

Ingredients (serves 2)

For the veal

  • 2 veal escalope’s (if not already thin, bash)
  • 1 egg, lightly beaten
  • small handful of flour
  • large handful of panko breadcrumbs
  • 1 tbsp olive oil
  • wedge of fresh lemon to serve

For the sautéed sweet potatoes

  • 1 large sweet potato
  • 1 tbsp olive oil
  • seasoning
  • 1/2 tbsp garam masala (recipe here)

Directions

  1. Start by peeling the sweet potato and cut into medium sized cubes. Put the chopped potatoes in a pan of boiling water and simmer for 5 minutes.
  2. Drain potatoes and heat the olive oil in a medium sized pan. Add the part cooked potatoes and cook for 20 minutes stirring all of the time. Season with salt and garam masala.
  3. For the schnitzel’s, prepare the flour, egg and breadcrumbs into separate bowls. Dip the escalope’s in the flour, egg and breadcrumbs so well coated. Repeat with the 2nd piece of veal.
  4. Heat the olive oil in a medium frying pan over a medium heat, add the prepared schnitzel’s and cook for 3 mins per side.
  5. Serve with the sautéed potatoes. Enjoy.
