Another tasty salad for lunch today from what we had the fridge. I love the saltiness of the feta, the creaminess of the avocado and the sharp hit of the lemon they all taste good in one bite. This took me 10 minutes to make and feta keeps in the fridge for ages so this is a good standby ingredient to always have in the fridge as it also tastes good in omelettes too.
Ingredients (serves 2)
For the salad
- 1/3 pack of feta cubed
- 1 avocado peeled and chopped
- 1 small bag of salad leaves
- 8 cherry tomatoes halved
For the Dressing
- juice of 1 lemon
- zest of 1/2 lemon, finely chopped
- 1 tsp of honey mustard (if using dijon may need to add honey to sweeten)
- 4 tbsp olive oil (I used our thyme olive oil recipe here)
- crack of salt and pepper
Method
- Make the dressing by combining all of the dressing ingredients into an empty jar, put on the lid and shake to combine, taste and adjust if needed. (can whisk instead)
- Share the salad ingredients into 2 bowls and drizzle of the dressing
- Enjoy!
