I love my air fryer, I chuck most things in it. It saves electricity and needs minimal oil if any so it keeps it skinny too. I really love the even crisp and browning you get from kale crisps to skewers like this. These are classic Mediterranean flavours they remind me of holidays in the sun sipping wine and people watching. I had some jarred beetroot in the fridge and thought they would add an extra earthy flavour. The colour is awesome too. These would be great as part of a BBQ and a bit different and light for your guests. They look impressive but are really simple to make.







Ingredients (makes 6 skewer)
For the Skewers
- 1 tbsp olive oil
- 1tbsp runny honey
- 1 tsp dried oregano
- Good pinch red pepper or chilli flakes
- Good pinch of salt
- Pack of halloumi (225g) , drained and cut into chunks to fit on the skewers
- 6 baby cooking chorizo, I remove the casing
- 1 small courgette, cut into 1cm slices
- 12 cherry vine tomatoes
For the Beetroot Hummus
- I tin of chickpeas (400g), drained reserving 1 tbsp of the chickpea water ( aquafaba) it makes the hummus lovely and light
- 100g jarred pickled beetroot
- 2 tbsp tahini, give the jar a stir first
- 1 garlic clove, peeled and roughly chopped
- 2-3 tbsp good olive oil
- Juice of a lemon
- Good pinch of sea salt
Directions
Skewers
- In a bowl add the olive oil, honey, oregano, red pepper flakes and salt. Give in a whisk so everything combines evenly.
- Assemble the skewers by first adding a tomato. A chunk of halloumi. Dip the courgette in the marinade thread onto the skewer. Dip a whole chorizo in the marinade add to the skewer. Then add another halloumi chunk, marinated courgette and tomato. Repeat with the rest of the skewers.
- When you’re ready to cook, heat your air fryer to 190 degrees then cook for 10 mins until they start brown if they need a bit longer just cook for a further minute at a time.
For the hummus
- In a food processor or blender add all of the ingredients (only 2 tbsp of the olive oil) and blitz until smooth.
- Have a taste and adjust seasoning and add more olive oil if you need it for the smoothness.
