Smoked Chicken Caesar Salad

I love a good Caesar salad but I can find them a bit heavy and calorific. I have lightened up the dressing on mine by using light mayonnaise. I also used a smoked chicken breast to make it a bit more exciting. I just love the contrasts of really crisp lettuce, soft chicken, crunch from the croutons and saltiness of the bacon and anchovies.

Ingredients (serves 2)

For the Dressing

  • 1 tbsp light mayo
  • 1 tsp Dijon mustard
  • 2 anchovies, finely chopped
  • 1 garlic clove, peeled and roughly chopped
  • 1 tbsp olive oil
  • Juice of half a lemon
  • 1 tbsp finely grated parmesan cheese
  • Pinch of sea salt

For the Salad

  • 1 smoked Chicken Breast, Sliced
  • 2 little gem lettuces, sliced and core discarded
  • 6 slices of smoked streaky bacon
  • 1 slice stale bread, torn into pieces
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • 8 anchovies
  • Parmesan shavings to garnish
  • Sea salt and fresh black pepper

Directions

  1. To make the dressing add all of the ingredients in a food processor and blitz until smooth.
  2. Put the streaky bacon in the air fryer (or grill if your using) and cook at 200 degrees for 15-20 minutes checking every 5 minutes remove and drain on kitchen paper.
  3. In a bowl add the bread, 1tbsp olive oil and the dried rosemary. Give it a good mix so all of the bread pieces have some oil. Put them in the air fryer again at 200 degrees and cook for 10 minutes. Set aside.
  4. Assemble the salad by adding the sliced gem between 2 bowls. Add the chicken slices. Break up the bacon pieces and add them along with croutons. Finish off with the anchovies, parmesan shavings and dressing. Enjoy. 😊
