I always think gammon is seen as a really old fashioned ingredient. It does remind me of my childhood particularly my nan. This potato salad is going to be such a go to it was so yummy and really simple to make. It has everything, its got a bit of crunch from the gherkins and spring onion. You then get a hit from all the fresh herbs. I had mine warm but I think it would also be delicious cold.






Ingredients (serves 2)
- 2 Gammon steaks I used unsmoked
- 500g baby new potatoes
- 100g tenderstem broccoli
- 1 tbsp fresh chives, chopped
- 6 gherkins, chopped
- 2 spring onion, sliced
- 1 tbsp mayo, I used light
- 1 tbsp olive oil
- Juice ½ lemon
- ½ tbsp Dijon mustard
- Sea salt and fresh black pepper
Directions
- Heat a pan of water to boiling.
- Add the potatoes and simmer for 15 minutes. Add the broccoli and cook for a further 2 minutes. Drain and set aside.
- Mix together the mayo, olive oil, lemon juice, mustard and a good pinch of salt and pepper.
- Add the potatoes back to dry pan or a bowl. Add the mayo mixture and give it a good toss so they potatoes are coated.
- Add the broccoli, chives, gherkins and spring onions, give it a light toss. Place lid on to keep warm.
- Heat a frying pan with a spray of oil until hot. Cook the gammon for 2 minutes on each side. Serve with the potato salad. Enjoy 😊
