Gammon Steaks with a Warm Potato and Broccoli Salad

I always think gammon is seen as a really old fashioned ingredient. It does remind me of my childhood particularly my nan. This potato salad is going to be such a go to it was so yummy and really simple to make. It has everything, its got a bit of crunch from the gherkins and spring onion. You then get a hit from all the fresh herbs. I had mine warm but I think it would also be delicious cold.

Ingredients (serves 2)

  • 2 Gammon steaks I used unsmoked
  • 500g baby new potatoes
  • 100g tenderstem broccoli
  • 1 tbsp fresh chives, chopped
  • 6 gherkins, chopped
  • 2 spring onion, sliced
  • 1 tbsp mayo, I used light
  • 1 tbsp olive oil
  • Juice ½ lemon
  • ½ tbsp Dijon mustard
  • Sea salt and fresh black pepper

Directions

  1. Heat a pan of water to boiling.
  2. Add the potatoes and simmer for 15 minutes. Add the broccoli and cook for a further 2 minutes. Drain and set aside.
  3. Mix together the mayo, olive oil, lemon juice, mustard and a good pinch of salt and pepper.
  4. Add the potatoes back to dry pan or a bowl. Add the mayo mixture and give it a good toss so they potatoes are coated.
  5. Add the broccoli, chives, gherkins and spring onions, give it a light toss. Place lid on to keep warm.
  6. Heat a frying pan with a spray of oil until hot. Cook the gammon for 2 minutes on each side. Serve with the potato salad. Enjoy 😊
