Veggie Tiffin Box – Spiced Air fryer Crispy Okra and Cauliflower Curry

We were in Malaysia earlier in the year and before I go on holiday I like to see what souvenirs I can find (usually food related 😊) I saw online they also use tiffin boxes in Malaysia even though you usually associate them with India. It was so funny as they came up on my search as one of the top ten souvenirs. We were there for 3 weeks, travelling to different places and tried to find one everywhere where we went. We didn’t find one until 2 weeks into holiday when we were in Penang. We saw some in a café but they were for decoration only. We then saw some in a restaurant they had some for sale but they weren’t very nice. We then stumbled across a little antique/souvenir shop and finally found them. The one in the picture was a functional one

but I also bought the most beautiful antique Chinese version too. I decided to go veggie for this tiffin and I have always wanted to have a go at okra but when I tried before it went a bit slimely, the air fryer stopped this completely.

Ingredients

For the curry
  • 1 cauliflower, florets only
  • 1 tbsp cumin seeds
  • 1 tbsp mustard seeds
  • 2 banana shallots, peeled and finely chopped
  • 1 red chilli, seeds removed and finely chopped
  • 1 tbsp garlic and ginger paste
  • 1 tbsp ground cumin
  • 1 tbsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 1 heaped tsp curry powder
  • 1 tsp sea salt
  • 1 tin chopped tomatoes
  • 1 tbsp ghee or oil
For the air fryer okra
  • 175g okra
  • 2 tbsp gram or oat flour or gram flour
  • 1 tsp sea salt
  • 1 tbsp ground coriander
  • 1 tbsp garam masala
  • 1 tbsp oil
  • Pinch red pepper flakes

Directions

For the Curry
  1. Bring a Saucepan of water to boiling. Add the cauliflower florets and blanch for 3 minutes. Drain and set aside. 
  2. In the same pan add a knob of ghee until hot. Add the mustard and cumin seeds and cook for 30 sec to a minute (when they start to pop they are ready). Add the shallot and chili, cook for a couple of minutes.
  3. Add the garlic and ginger paste cook for a minute until fragrant. Next stir in all the spices, give it a good stir so everything is coated. 
  4. Pour in the chopped tomatoes along with a tin of water. Add the blanched cauliflower florets. Bring to the boil then reduce to a simmer and cook for 30 minutes. Serve and enjoy 😊
For the Okra
  1. Heat you air fryer to 200 degrees. Wash and pat dry the okra (make sure the are completely dry) yop and tail them and cut them length ways into quarters. Scrape as many of the seeds out that you can.
  2. In a bowl add the rest of the ingredients and give it a mix. Add the okra and give it a good mix so they are coated. Set timer for 10 minutes Add to the air fryer and cook for 5 minutes give them a good shake and cook for the rest of the 5 minutes. Serve and Enjoy 😊
