Healthy Ham and Herby Potato Salad

This was a really nice change from the usual mayonnaise dressing used in a potato salad. The potatoes tasted fresh and zingy. I think the key to this is making sure you use good quality olive oil. It is summer in a bowl.

Ingredients (serves 2)

  • 8 new potatoes, I used pink fir
  • 1 tbsp good quality olive oil
  • 1 tbsp fresh parsley, chopped
  • ½ tbsp fresh mint, chopped
  • 1 tbsp fresh chives, chopped
  • Juice of a lemon
  • Good pinch of sea salt and pepper
  • Small bag rocket leaves
  • 2 slices of ham

Directions

  1. Bring a pan of water to the boil. Add the potatoes and cookfor 20 minutes or until the are soft when you prick them with a fork. Drain and return to the pan or tip them into a bowl.
  2. In a bowl add the olive oil herbs, lemon juice and salt and pepper. Give it a stir to combine. Pour over the potatoes and give it toss, so all the potatoes are covered.
  3. Share the rocket leaves between to bowls. Top with the potatoes and finish by tearing over the ham. Enjoy 😊
