This was a really nice change from the usual mayonnaise dressing used in a potato salad. The potatoes tasted fresh and zingy. I think the key to this is making sure you use good quality olive oil. It is summer in a bowl.




Ingredients (serves 2)
- 8 new potatoes, I used pink fir
- 1 tbsp good quality olive oil
- 1 tbsp fresh parsley, chopped
- ½ tbsp fresh mint, chopped
- 1 tbsp fresh chives, chopped
- Juice of a lemon
- Good pinch of sea salt and pepper
- Small bag rocket leaves
- 2 slices of ham
Directions
- Bring a pan of water to the boil. Add the potatoes and cookfor 20 minutes or until the are soft when you prick them with a fork. Drain and return to the pan or tip them into a bowl.
- In a bowl add the olive oil herbs, lemon juice and salt and pepper. Give it a stir to combine. Pour over the potatoes and give it toss, so all the potatoes are covered.
- Share the rocket leaves between to bowls. Top with the potatoes and finish by tearing over the ham. Enjoy 😊
