This is such a classic British combination, roast beef, potatoes and horseradish. I really love cold roast beef and it can be added to all cuisines in a salad (I also love it in Asian noodle salad) I also cook a few extra potatoes when I am using them for a dinner so I can use them cold in a salad like this one


Ingredients (serves 2)
For the Salad
- Leftover roast beef, roughly torn
- Small bag rocket leaves
- 4 cooked new potatoes, sliced
- 4 gherkins sliced
For the Dressing
- 1 tbsp hot creamed horseradish
- 1 tbsp unflavoured oil. Rapeseed
- Splash of water
- Pinch of sea salt and fresh pepper
Directions
- Make the dressing by adding all of the ingredients into a jar or bowl. Give it a shake or whisk to combine.
- Layer up the salad by adding the rocket, sliced potatoes, gherkins and beef to a bowl. Drizzle over the dressing. Enjoy 😊
