As we having a mini heatwave (which is amazing) I fancied a really tropical salad. I also listened to a pod cast saying as mangoes are fibrous they help with anti aging. This was zingy, fresh and really yummy. Its also really nice that it uses all of mango.











Ingredients (serves 2)
- 1 mango
- 150g hot smoked salmon
- 100g French beans, topped and tailed
- 200g breakfast radishes, tops removed and sliced
- 1 small bag salad leaves
- ¼ red onion, finely diced
- 1 small re chilli, seeds removed and finely diced
- zest and juice of a lime
- 2 tbsp coriander, roughly chopped
- Sea salt and fresh pepper
Directions
- To prep the mango, slice the mango ‘cheeks’ off slice and set aside. Slice the other sides off the mango and dice into small chunks. Next trim off the off cuts. Blitz in a food processor to form a puree. I needed to add a splash of water to mine, to loosen.
- Make the dressing by adding the onion, chilli, lime, coriander. Season to taste.
- Assemble the salad by sharing the salad leaves between 2 serving bowls. Add the beans and radishes. Spoon over the dressing. Finish by flaking over chunks of the salmon.
