Tomato Salsa with Wild Garlic Pesto and Capers

I went foraging for wild garlic and made a big batch of pesto. So I am using it in everything at the moment this was really tasty as garlic and tomatoes go so well together. I stayed on the Mediterranean theme by adding the capers and red wine vinegar. It did need a crunch so I used a gherkin which worked perfectly. You could have this with so many things like ham, chicken or fish. I kept mine veggie and had it with courgette and feta fritters

Ingredients (serves 2)

  • 2 large vine tomatoes, seeds removed and roughly chopped
  • 1 tsp sea salt
  • 2 tbsp pesto, I used wild garlic (recipe here)
  • 1 tbsp capers, drained and rinsed
  • 1 gherkin, roughly chopped
  • Juice ½ lemon
  • 1 tsp red wine vinegar or balsamic vinegar

Directions

  1. Add the chopped tomatoes to a bowl. Sprinkle over the salt. Give it a mix and leave at room temperature for 5-10 minutes so they release their juices.
  2. Add the rest of the ingredients to the tomatoes and lightly fold through so everything is combined. Enjoy 😊
