5 2 Diet Meatless Monday – Moroccan Stew Recipe (148 kcal)

So Paulie has decided he wants to shift his extra weight by the summer so he has opted for the 5 2 diet. You have 5 normal days and 2 fasting days where you can only have 600 (men) or 500 (women) calories all day. So I started doing my research to find recipes we can have and this was one of them. It was actually really tasty and filling, it is also great for lunch or dinner.

Ingredients (4 servings)

  • 1 onion, peeled and finely chopped
  • 1/2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp garam masala, optional
  • 1 tsp tumeric
  • 1/2 litre of hot vegetable stock
  • 400g tin of chopped tomatoes
  • 400g tin of chickpeas, drained and rinsed
  • 100g frozen soya beans
  • zest and juice of 1/2 lemon
  • 1 tsp roasted garlic cloves, or 2 finely chopped fresh garlic cloves fried with the onion
  • pinch of salt and pepper
  • 1/2 tsp chilli powder, optional
  • fresh herbs to garnish, I had oregano leaves

Directions

  1. Heat the oil in a large saucepan, then fry the onion (and garlic if using fresh) gently for 10 mins until softened, stirring frequently. Tip in the cumin, garam masala and tumeric and fry for another min.

  2. Turn up the heat, then add the stock, tomatoes and chickpeas, plus a good grind of black pepper. Simmer for 8 mins. Throw in broad beans, chilli powder, roasted garlic (if you have it), lemon juice and zest, cook for a further 2 mins. Season to taste, then top with a sprinkling of lemon zest and chopped herbs. Serve with flatbread if you have any spare calories.

  2. I have never heard of this diet plan before! Maybe I will give it a try… i am in need of something! We have been doing a lot of meatless mondays recently too!
