Paulie and I were in a health food shop buying some staples and in the fridge were these raw chocolate square’s, Paulie has a real sweet tooth so bought one and liked it so much he asked me to have a go at making some. The taste was amazing and it’s texture was like chocolate mousse except it doesn’t have any dairy product’s at all. I took some into work and my colleagues absolutely loved them.
Ingredients (makes 1 tray)
For the base
- 100g raw blanched almonds
- 150g walnuts
- 9 pitted mejool dates
- pinch of sea salt
- 2 tbsp coconut oil
For the chocolate topping
- 4 avocado’s, flesh only
- 200ml runny honey
- 200ml coconut oil
- pinch of sea salt
- 125g pot of cocoa powder
Directions
- Make the base by adding the almonds, dates and walnuts into a food processor. Pulse until chopped add in the salt and oil, blitz again until it comes together like a dough when squashed in your hand.
- Spray or grease a square tray bake. Tip in the nut dough and press down with your hands to form an even layer. Place in the fridge while you make the topping.
- Give the food processor bowl and blade a clean and dry. Add all of the topping ingredients to the food processor and blitz until smooth and shiny.
- Top the nut base with the chocolate topping and spread out evenly. Place in a cold fridge to set for at least an hour or until needed. To serve, cut into squares or slices. Enjoy.
